Every Day Sandwich Bread

I'm a SC-based freelance "loafer" and bread recipe developer.


Here's the every day sandwich bread recipe I use:

4 cups unsifted, all purpose flour (Gold Medal) (scoop and level off dry measuring cup)
1 1/2 cups milk (using liquid measuring cup)
2 large eggs
1 teaspoon salt
1/4 cup fine granulated sugar
1 Tablespoon plus 1 teaspoon soft shortening, like Crisco in the can
2 Tablespoons unsalted, softened butter (not melted)
1 1/4 teaspoons rapid rise dry yeast (you can use bread machine yeast, if you want)

Mix all dry ingredients together, whisk, and set aside.
Mix liquid ingredients together in a saucepan, stir until warm and well-combined.
Mix all together in a large bowl with the handle of a wooden spoon.

Grease with butter only a glass or ceramic loaf pan.

Follow a no-knead bread method.

Preheat and Bake 400 deg. F for 20-21 minutes
